- Oil, for oiling grill
- 1/2 pound red chile peppers
- 2 habanero chiles
- 2 cups white vinegar
- 2 tablespoons cayenne pepper
- 2 tablespoons salt
- 2 tablespoons sugar
- 1/2 teaspoon xanthan gum
Directions

1Preheat a grill over medium-high heat.

2Lightly oil the grill grates.

3Grill the red chiles and habaneros, turning occasionally, until charred all around.

4Cut stems off and let cool.

5In the bowl of a food processor, combine the charred chiles with the vinegar, cayenne, salt, sugar, xanthan gum and 1 cup water.

6Blend well.

7Serve with anything, but beware of spiciness!
