Hot Spinach Cheese Dip

- 1 can Ortega hot chilies, chopped
- 1 small onion, chopped
- 3 Tbsp. vegetable oil
- 2 tomatoes, chopped
- 10 oz. pkg. thawed spinach, squeeze out water
- 1 Tbsp. red wine vinegar
- 8 oz. cream cheese
- 1 c. half and half
- 2 c. grated Monterey Jack cheese

Directions

1In skillet, cook onion and hot chilies in oil until softened (approximately 4 minutes).

2Add tomatoes and cook 2 more minutes. Add onion and chilies to bowl and stir in spinach, vinegar, cream cheese, Monterey Jack cheese and half and half.

3Salt and pepper to taste (approximately 1/2 teaspoon).

4Put in buttered baking dish and cook at 400° for 20 to 25 minutes.

5Serve with tortillas.
