Hot Spinach Cheese Dip

  • 1 can Ortega hot chilies, chopped
  • 1 small onion, chopped
  • 3 Tbsp. vegetable oil
  • 2 tomatoes, chopped
  • 10 oz. pkg. thawed spinach, squeeze out water
  • 1 Tbsp. red wine vinegar
  • 8 oz. cream cheese
  • 1 c. half and half
  • 2 c. grated Monterey Jack cheese
  • tortillas

Directions

    In skillet, cook onion and hot chilies in oil until softened (approximately 4 minutes).

    Add tomatoes and cook 2 more minutes. Add onion and chilies to bowl and stir in spinach, vinegar, cream cheese, Monterey Jack cheese and half and half.

    Salt and pepper to taste (approximately 1/2 teaspoon).

    Put in buttered baking dish and cook at 400° for 20 to 25 minutes.

    Serve with tortillas.
