  • 1-1/2 cup raw chickpeas, soaked 1-1/2 hours and boiled until very soft
  • 3 md. cloves garlic
  • 1-1/2 tsp. salt
  • 2 md. lemons, juice of
  • 3/4 cup tahini
  • 1/4 cup finely minced parsley, packed
  • Black pepper, to taste
  • 1 dash cayenne pepper
  • 1/4 cup minced scallions

Directions

    Mash chickpeas to a thick paste, using a food mill or grinder, or masher.

    Combine everything and chill thoroughly.
