Ingredients

  • 4 to 6 eggs
  • 1 to 2 hot peppers, mashed
  • 1 can peeled tomatoes
  • 1 medium onion
  • 1 small garlic clove, mashed
  • salt and pepper to taste
  • 2 Tbsp. bacon drippings

Directions

    Saute onion in 2 tablespoons bacon drippings.

    Combine hot peppers, garlic and tomatoes.

    Mash and add to the pan with onion. Season with salt and pepper to taste.

    Scramble or prepare easy over eggs.

    Pour the tomato mixture over top of eggs and garnish with bacon strips, fresh parsley, orange or tomato slices.
