Ingredients

  • 2 c. plain flour
  • 2 c. sugar
  • 1 tsp. salt
  • 1 tsp. soda
  • 1 tsp. cinnamon
  • 3 eggs, slightly beaten
  • 1 1/2 tsp. vanilla
  • 1 (8 oz.) can crushed pineapple, do not drain
  • 1 c. chopped pecans
  • 2 c. chopped bananas
  • 1 1/2 c. salad oil

    Do not use a mixer with this cake.

    Very little mixing is required.

    Combine dry ingredients in a large bowl.

    Add eggs and oil, stirring just until moistened.

    Stir in vanilla, 1 cup pecans, pineapple and bananas.

    Spoon batter into 3 wax paper lined 9-inch pans.

    Bake at 350° for 25 to 30 minutes.

    Cool in pan 10 minutes.

    Remove to rack and cool completely.

    Fill and frost with Cream Cheese Frosting.
