- 1/4 c. loosely packed parsley
- 2 cloves garlic
- 1 (19 oz.) can chickpeas, drained and rinsed
- 2/3 c. olive oil
- 1/2 c. tahini
- 6 Tbsp. fresh lemon juice
- 1/2 tsp. cumin
- 1 tsp. salt
- freshly ground pepper
- 3 Tbsp. additional olive oil (to garnish)
- paprika and olives (to garnish)
Directions

1Mince parsley in food processor; set aside.

2Drop garlic through feeding tube while machine is running.

3Process until well minced.

4Add chickpeas, 2/3 cup olive oil, tahini, lemon juice, salt, cumin and pepper.

5Process until smooth.

6Spoon into serving bowl; drizzle with remaining olive oil and sprinkle with parsley. Garnish with olives.
