Ingredients

  • 1/4 c. loosely packed parsley
  • 2 cloves garlic
  • 1 (19 oz.) can chickpeas, drained and rinsed
  • 2/3 c. olive oil
  • 1/2 c. tahini
  • 6 Tbsp. fresh lemon juice
  • 1/2 tsp. cumin
  • 1 tsp. salt
  • freshly ground pepper
  • 3 Tbsp. additional olive oil (to garnish)
  • paprika and olives (to garnish)

Directions

    Mince parsley in food processor; set aside.

    Drop garlic through feeding tube while machine is running.

    Process until well minced.

    Add chickpeas, 2/3 cup olive oil, tahini, lemon juice, salt, cumin and pepper.

    Process until smooth.

    Spoon into serving bowl; drizzle with remaining olive oil and sprinkle with parsley. Garnish with olives.
