- 1 1/2 c. canned chickpeas (garbanzo), drained
- 3 garlic cloves
- 1/2 tsp. salt
- juice of 2 lemons
- 1/4 c. minced parsley
- 1/4 c. minced scallions
- black pepper
- dash of cayenne pepper
- pita bread, split and cut in quarters
- a little olive oil
Directions

1Spread bread with a little olive oil and bake for 10 minutes. Mash the chickpeas into a thick paste in food processor or blender or with a fork.

2Add all the remaining ingredients.

3Chill and season to taste.

4Dip pita bread into the hummus or use it as a dip with cut vegetables.
