- 1/4 c. tahini (canned ground hulled sesame seed)
- 1 clove garlic, peeled and sliced
- 20 oz. can chickpeas, drained
- 1/4 c. lemon juice
- 1/4 c. olive oil
- 1/2 tsp. salt
- 1/8 tsp. white pepper
Directions

1In an electric blender, whirl together the tahini, lemon juice, olive oil, garlic salt and pepper until smooth.

2With blender running, tip center cap in the cover and gradually add the chickpeas, blending until smooth and a pale color.

3Stop blender as necessary and, with a rubber spatula, push the mixture towards the blades, to make sure all the chickpeas are crushed.

4Chill, tightly covered.

5Serve as a spread with crackers or small wedges of hot pita.

6Makes a generous 2 cups.
