  • 2 c. white cornmeal
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 6 Tbsp. finely chopped onion
  • 2 c. lard or shortening
  • 1 Tbsp. flour
  • 1 tsp. baking soda
  • 1 egg, beaten
  • 1 tsp. cayenne pepper
  • 1 1/3 c. buttermilk

Directions

    Combine cornmeal, flour, baking powder, baking soda and salt in medium size bowl.

    Stir in egg, onion and cayenne pepper.

    Add buttermilk; beat well.

    Heat lard in heavy frypan until hot, about 375°.

    Drop rounded teaspoonfuls of batter into hot fat.

    Fry until golden brown, turning once.

    Drain on paper towels.

    Wrap hush puppies in heavy foil; place in warm oven (250°) until ready to serve.
