- 1/2 c. Bisquick baking mix
- 2 eggs
- 2 (8 oz. each) pkg. cream cheese, cut into 1-inch cubes and softened
- 2 tsp. vanilla
- 1/2 tsp. grated lemon peel
- Cheesecake Topping (follows)
Directions

1Heat oven to 350°.

2Grease a pie plate, 9 x 1 1/4-inch.

3Place all ingredients except topping in a blender container.

4Blend on high speed, stopping blender occasionally to stir, until smooth, about 3 minutes (or beat in a large bowl on high speed with electric mixer for 2 minutes).

5Pour into a plate; bake just until puffed and center is dry, about 30 minutes.
