Impossible Zucchini Quiche

- 2 c. chopped zucchini
- 1 c. tomatoes
- 1/2 c. onion, chopped
- 1/3 c. Parmesan cheese
- a sprinkle of oregano, basil and parsley (optional)
- pepper to taste
- 1 1/2 c. milk
- 3/4 c. Bisquick mix
- 3 eggs
- 1/4 tsp. salt
Directions

1Heat oven to 400°.

2Lightly grease a 10-inch pie plate.

3Mix the veggies, cheese and spices together and put in the plate.

4In blender, mix the milk, Bisquick mix and eggs and blend until well mixed.

5Pour over the veggies and stir gently.

6Bake for 30 minutes or until a silver knife comes out pretty clean when inserted 1-inch from the edge.

7Cool slightly and serve.

8Good with a tossed salad and a crispy homemade bread.
