- 1 c. chopped tomato
- 1/2 c. chopped onion
- 1/2 c. grated Parmesan cheese
- 1 1/2 c. milk
- 3/4 c. Bisquick baking mix
- 3 eggs
- 1/2 tsp. salt
- 1/4 tsp. pepper
Directions

1Heat oven to 400°.

2Grease 10-inch quiche dish.

3Sprinkle zucchini, tomato, onion and cheese in plate.

4Beat remaining ingredients until smooth (15 seconds in blender).

5Pour into plate.

6Bake until knife inserted in center comes out clean (about 30 minutes).
