Indian Chicken Curry

- 1/3 c. butter
- 1 large onion, chopped
- 1 c. chopped celery
- 2 tart apples, chopped and peeled
- 1 Tbsp. curry powder
- 6 Tbsp. flour
- 1 c. chicken broth
- 1/2 c. cream of coconut
- 1 pt. half and half
- 3 c. diced, cooked chicken
Directions

1In a large saucepan, melt butter and saute onion, celery and apples for 5 minutes.

2Stir in curry and flour.

3Gradually stir in chicken broth, cream of coconut and half and half.

4Stir over moderate heat until sauce bubbles and thickens.

5Stir in chicken and season to taste with salt and pepper.

6Serve over rice.
