- 1 1/2 c. flour
- 3 tsp. baking powder
- 1 tsp. salt
- 1/2 c. sugar
- 1/4 c. softened butter or margarine
- 2 eggs
- 1/2 c. milk
- 1 c. pumpkin
- 1 c. yellow corn meal
- 1 c. blueberries (optional)
- 1/2 c. coarsely chopped walnuts (optional)
Directions

1Mix flour, baking powder and salt.

2Set aside.

3Beat eggs, sugar and butter until smooth.

4Add pumpkin, milk and corn meal. Beat until smooth.

5With wooden spoon, stir in flour mixture, mixing until it just combines.

6Don't overstir.

7Gently stir in blueberries and nuts, if desired.

8Bake at 350° for 1 hour.
