- 1 yellow onion
- 8 chicken thighs
- 1 can chicken broth
- 1 can coconut milk
- 1 can corn
- olive oil
- curry powder /paste
- chili flakes
Directions

1Use a pot big enough to hold all liquid

2Cube/dice onion

3Cut chicken into bite-sized pieces

4On medium heat, add enough olive oil to your pot to cook the onion Cook until it turns translucent
-
5Add the curry powder to the pot, making sure to coat all the chicken and onions. Cover the pot and let the chicken cook, stirring every so often so that the more raw pieces have a chance to get cooked.

6Add one can of chicken broth, and stir.

7Add one can of coconut milk while stirring. *Make sure the pot is not boiling or hot enough that the milk will curdle.

8Add chili flakes to make your curry a little spicier! (optional)

9Add one can of corn, don't add the juice unless you want to make your curry thinner.

10Turn your heat on low, and cover until you are ready to eat! ENJOY!
