  • 1 medium eggplant (about 1 1/2 lb.)
  • 1 c. all-purpose flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. turmeric
  • 2 tsp. curry powder
  • 1 c. milk
  • 1 egg
  • 1/4 c. salad oil

    In a baking dish, place a layer of sliced raw potatoes, then some chopped onion. Repeat layers. Mix a can of Cheddar cheese soup with a little water and pour over potatoes. Cover and bake at 350° for about 50 minutes or until tender.
