Ingredients
- 1 cup ghee (clarified butter)
- 2 large onions chopped
- 4 large garlic cloves
- 1 teaspoon ginger grated
- 2 teaspoons turmeric
- 2 teaspoons cayenne pepper
- 2 teaspoons garam masala
- 4 each tomatoes ripe
- 13 cup yogurt
- 1 x salt
- 2 1/2 cups water
Directions

1Heat ghee and saute onions and garlic until golden.

2Stir in ginger, turmeric, cayenne and garam masala in turn.

3Stir fry for 5 minutes.

4Add tomatoes and yogurt.

5Stir in salt and cook for 2 minutes.

6Pour in water and bring to a boil.

7Reduce heat and simmer for 10 minutes.

8The gravy is now ready to use.

9Makes 2 1/2 cups.
