- 4 cups low-fat milk
- 1 cup maple syrup
- 1/4 cup butter
- 23 cup yellow cornmeal
- 1/2 tsp. dried ginger
- 1/4 tsp. ground allspice
- 1 cup dried cranberries or cherries
Directions

1Preheat oven to 300F.

2Butter a 2-quart casserole.

3In medium saucepan over medium heat, combine 3 cups milk and maple syrup.

4Heat until just boiling, then add butter.

5In bowl, combine cornmeal, ginger and allspice.

6Gradually stir cornmeal mixture into hot milk.

7Reduce heat to low and cook until thickened (coats back of spoon), about 5 minutes.

8Fold in cranberries or cherries.

9Spoon mixture into prepared casserole and pour remaining milk over top of pudding.

10Do not stir.

11Bake until milk has been absorbed and top is golden brown, about 1 1/2 to 2 hours.

12Serve warm.
