Ingredients

  • 2 c. diced cooked chicken breast (skinned before cooking and without salt)
  • 3/4 c. diced celery
  • 1/4 c. diced onion
  • 1 (4 oz.) can sliced mushrooms, drained
  • 1 c. evaporated skimmed milk
  • 1/4 c. egg substitute
  • 1 Tbsp. reduced sodium Worcestershire sauce
  • 1/2 tsp. salt
  • 1/4 tsp. white pepper
  • vegetable cooking spray
  • 1/3 c. whole cranberry sauce

Directions

    Combine first 9 ingredients; divide equally into 6 (6 ounce) custard cups coated with cooking spray.

    Cover loosely with foil; bake at 350° for 50 minutes or until a knife inserted in center comes out clean.

    Uncover and let stand 5 minutes.

    Remove chicken from custard cups.

    Top each serving with cranberry sauce.
