Individual Shrimp Quiche

Ingredients

  • 1/4 c. butter
  • 4 oz. cream cheese
  • 2 Tbsp. heavy cream
  • 1 1/4 c. flour
  • 1/2 tsp. salt
  • 1 1/2 c. roughly cut shrimp (shrimp can be replaced by other shellfish, mushrooms, chopped ham, bacon or sauteed onions)
  • 1 1/2 c. heavy cream
  • 3 eggs, lightly beaten
  • 1/2 c. finely grated Gruyere or Swiss cheese
  • salt and pepper to taste
  • 1 tsp. fresh dill (replace dill with 1/8 tsp. nutmeg)
  • 1/3 c. fresh grated Parmesan cheese

    Cream butter and cheese very well; beat in 2 tablespoons cream; work in flour and salt to make dough.

    Wrap in wax paper and refrigerate several hours or overnight.
