  • 4 pitas
  • 2 teaspoons minced garlic bottled
  • 1 cup shredded mozzarella cheese or more
  • 1/2 cup vidalia onion sliced
  • 1 tablespoon cider vinegar
  • 2 teaspoons olive oil
  • 1/4 teaspoon crushed red pepper
  • 1 cup grape tomatoes quartered
  • 1/4 cup kalamata olives coarsley chopped
  • 2 tablespoons fresh basil chopped
  • 4 cups greens or more fresh

Directions

    Preheat oven to 475.

    Place pitas on baking sheet, spread 1/2 teaspoon garlic on each. Sprinkle some onion, and cheese. Cook for 8 minutes or until cheese is bubbly.

    While pitas bake, combine olive oil, vinegar, and pepper in bowl, toss with greens and veggies.

    Remove pitas and top with 1 cup (or more) of the greens and dressing mixture.
