Iowa Corn Chowder

  • 6 slices bacon
  • 3 medium potatoes, pared and chopped (2 c.)
  • 2 1/2 (1 lb.) cans whole kernel corn
  • 1 can evaporated milk
  • 1 large onion, chopped
  • 1/4 c. flour

Directions

    Chop bacon and cook in soup pan until crispy.

    Do not drain. Add onions and saute until soft.

    Add potatoes and 2 cups of the water; salt and pepper.

    Cover and simmer for 15 minutes or until potatoes are tender.

    Stir in corn with liquid.

    Blend the flour with the remaining water and stir into chowder.

    Cook, stirring constantly, until chowder thickens and bubbles, about 3 minutes. Ready to serve.
