- 1/4 tsp. baking powder
- 4 eggs
- 1 large onion, diced
- 1/8 c. vegetable oil
- 2 Tbsp. flour
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 (No. 303) can spinach
Directions

1Pour oil in skillet.

2Saute onion.

3Drain spinach (squeeze if necessary to get out liquid).

4Mix beaten eggs, salt, pepper, spinach and onion.

5Add flour to thicken.

6Pour into remaining oil in skillet.

7Spread evenly.

8Cook slowly one side, then turn to cook other side.

9Sprinkle with Parmesan cheese before serving.
