  • 1/4 c. oil
  • 6 garlic cloves, minced
  • 8 c. beef broth
  • 2 Tbsp. tomato paste
  • 1 Tbsp. sugar
  • 1 Tbsp. dried thyme
  • 1 Tbsp. Worcestershire sauce
  • 1 1/4 lb. beef stew meat, cut into 1-inch pieces
  • 2 bay leaves
  • 2 Tbsp. butter (1/4 stick)
  • 7 c. peeled, cubed potatoes
  • 1 large onion, chopped
  • 2 c. cubed carrots
  • 2 Tbsp. parsley flakes

    Heat oil in large pot over medium-high heat.

    Add beef and saute until well browned on all sides.

    Add garlic and saute 1 minute.

    Add beef broth, tomato paste, sugar, thyme, Worcestershire sauce, bay leaves and parsley.

    Stir to combine. Bring mixture to a boil.

    Reduce heat to medium-low; cover and simmer 1 hour, stirring occasionally.
