- 1/3 c. soft butter
- 1/3 c. light corn syrup
- 1/2 tsp. salt
- 1 lb. sifted 10x sugar
- 1 c. shredded coconut
Directions

1Beat butter or margarine with corn syrup until blended, then work in the remaining ingredients and knead well.

2Pinch off pieces just a bit smaller than walnuts and roll them between the palm of your hands.

3With your thumb, flatten one side slightly, then make a few dents with a toothpick so the balls resemble little potato eyes.

4Sprinkle a platter or piece of wax paper with cinnamon and roll potatoes until coated.

5Be sure to cover dish with plastic wrap to minimize drying out.

6Makes about 1 pound of candy.
