  • 1/2 cup butter, unsalted softened
  • 1 cup sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 3/4 cups flour, all-purpose
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 4 tablespoons powdered sugar for dusting

    Preheat oven to 350F (180C) F (175 degrees C).

    Grease a 9 inch round cake pan with butter, then flour the pan.

    In a medium bowl with an electric mixer, beat the butter and sugar until creamy, light and fluffy.

    Beat in the eggs, one at a time, then add the vanilla.

    Mix together the flour, baking powder and salt in a medium bowl.

    Stir into the batter alternately with the milk.

    If the batter is too stiff, add a or two tablespoon of milk.

    Spread the batter evenly into the prepared pan.

    Bake for about 35 minutes, until a toothpick or wooden stick inserted into the center comes out clean.

    Cool in pan on a wire rack completely, about 2 hours or longer.

    Then turn out onto a cake serving plate.

    Dust powdered sugar on top just before serving.
