  • 50 g/20 oz. medium oatmeal
  • 300 mi/1/2 pt. double cream or whipping cream
  • 25 g/1 oz. powdered sugar, sifted
  • 3 to 4 Tbsp. whiskey or rum
  • 225 g/8 oz. fresh raspberries
  • few drops vanilla essence

Directions

    Lightly toast oatmeal under the grill, turning frequently. Allow to cool.

    Whip cream until firm and frothy, but not stiff. Stir in powdered sugar, toasted oatmeal, whiskey (or rum), vanilla essence and most of the raspberries, reserving some for decoration.
