- small bunch of scallions
- 1/2 c. milk
- salt and pepper
- 1 knob butter per person
Directions

1Cook potatoes and pass through food mill.

2Chop scallions finely, both green and white parts.

3Cook 5 minutes in milk.

4Beat this mixture into mashed potatoes until smooth and fluffy.

5Season to taste and serve a large mound on each plate.

6Place a knob of butter on top of each mound.
