- 4 oz cream cheese, softened
- 1/2 cup butter, softened
- 2 1/2 cup Shredded sweetened coconut flakes
- 1 tbsp vanilla extract
- 3 cup powdered sugar
- 3 tbsp ground cinnamon
- 1 tbsp unsweetened cocoa powder
Directions

1In a large bowl, combine cream cheese and butter.

2Beat until creamy.

3Scrape down side of bowl.

4Add vanilla and coconut.

5Beat again until combined.

6Slowly add in powdered sugar, one cup at a time, mixing after each and scraping down the sides of the bowl.

7Be sure to start your hand mixer on the lowest setting at first or you WILL end up in a cloud of sugar.

8Once the ingredients are well mixed, refrigerate, uncovered for about 30-45 minutes.

9In a plastic storage bag, combine cinnamon and cocoa.

10Set aside.

11Now comes the fun part.

12Remove coconut blend from the refrigerator.

13Using a tablespoon measure, scoop out some of the mixture and Rollin your hands to form a ball.

14Toss the ball in the bag of cinnamon and shake until well coated.

15Store in a plastic container or serve in mini cupcake papers.
