  • 4 oz Philadelphia cream cheese block softened
  • 1 stick butter softened
  • 2 cup confectionery sugar
  • 7 oz shredded coconut
  • 1 tsp vanilla extract
  • 1/4 cup cinnamon

Directions

    cream butter and cream cheese until smooth

    add vanilla and then sugar in small amounts blending in between with a hand mixer until smooth

    add the shredded coconut mix with a wooden spoon you even have to use your hands.

    at this point the dough is pretty sticky.

    roll into 1 inch balls

    pour cinnamon in a shallow bowl or dish and roll each ball in the cinnamon

    place in an air tight container then place in the refrigerator about an hour or so until they set.
