- 1 1/2 lb. lamb or mutton, cut in cubes
- 3/4 c. sliced onion
- 2 1/2 lb. sliced potatoes
- salt and pepper
- 1 bay leaf
- 2 c. boiling water
- 2 Tbsp. chopped parsley
Directions

1In the bottom of a heavy pan, layer the potatoes, meat and onion.

2Begin with the potatoes.

3Repeat this layering twice, ending with the potatoes on top.

4Season with salt and pepper. Add the bay leaf; cover the mixture with water and parsley.

5Bring to a boil; cover and simmer over low heat for about 2 1/2 hours. Shake the pot periodically so that the potatoes do not stick. When done, the moisture should be absorbed by the potatoes.
