Ingredients
- 2 lb. breast of mutton or 1 1/2 lb. gigot chops
- 5 medium onions
- 2 lb. potatoes
- pepper and salt
- 1 pt. cold water
- 1 tsp. chopped parsley
Directions

1Cut meat into small pieces.

2Remove skin and fat.

3Peel onions and chop one.

4Wash and peel potatoes and cut in two.

5Slice one thinly.

6Place meat in bottom of stewpan, then put in the sliced potatoes and chopped onion, seasoned with pepper and salt.

7Add water.

8Boil.

9Simmer for 1 hour.

10Arrange the potatoes and onions on top and simmer for a further hour.

11When cooked, serve on hot dish, meat in center of onions and potatoes.

12Pour gravy over and garnish with parsley.
