Ingredients

  • 2 lb. lamb
  • 6 medium potatoes, peeled and quartered
  • 6 medium carrots, quartered
  • 1 small turnip, diced
  • 3 sprigs parsley
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 3 tsp. sugar
  • 2 Tbsp. flour
  • 1/2 c. cold water

Directions

    Cut the lamb into 1-inch cubes.

    Place in a large Dutch oven. Cover with 6 cups of cold water.

    Bring to a boil.

    Add potatoes, carrots, onions, turnip, parsley, salt, pepper and sugar.

    Cover and simmer about 2 1/2 hours or until meat is tender.

    Thicken the stew with the mixture of flour and cold water.

    Continue to cook an additional 15 minutes.

    Season to taste.

    Serves 6 to 8.
