- 1 cut-up fryer
- 2 Tbsp. oil
- 1/2 c. finely diced celery
- 1 small minced garlic clove
- 1 tsp. salt
- 1 bay leaf
- 1/2 c. Chablis wine
- 2 Tbsp. minced onion
Directions

1In a large skillet, brown chicken on all sides in oil Add celery, garlic and parsley.

2Cook 2 minutes and stir.

3Add salt, bay leaf and wine.

4Cover and simmer until chicken is tender, about 40 minutes.

5If desired, thicken sauce with 1 tablespoon of flour that has been blended with 1 tablespoon of water.

6Serves 4.
