  • 4 boneless chicken breasts
  • 1/2 c. butter
  • 1 c. Italian bread crumbs
  • 2 eggs
  • 1 c. sliced raw mushrooms
  • 4 oz. thinly sliced Mozzarella cheese
  • 1 c. chicken broth

Directions

    Cut chicken into 1-inch pieces.

    Soak in well beaten eggs for 1 hour in refrigerator.

    Saute mushrooms in butter.

    Roll chicken in bread crumbs.

    Brown chicken in butter until done. Place chicken and juices in casserole.

    Place mushrooms on chicken.

    Pour broth over this and top with the sliced cheese. Bake, covered, at 350° for 30 minutes.
