  • 2 1/2 c. chicken broth
  • 2 c. rice
  • 1 can sliced mushrooms
  • 1 can chopped tomatoes
  • 1 lb. Velveeta cheese, cubed
  • 1 onion, chopped
  • 2 Tbsp. Italian seasoning
  • 1 tsp. garlic powder
  • 5 boned and skinned chicken breasts

Directions

    In bowl, mix seasonings with mushrooms, tomatoes, Velveeta cheese and onion.

    In 13 x 9-inch Pyrex baking dish, mix chicken broth, rice and tomato mixture.

    Lay the chicken breasts on top of rice mixture.

    Sprinkle with salt and pepper and Parmesan cheese. Bake at 375° for one hour.
