  • 2 lb. haddock fillets
  • 1 lb. fresh tomatoes, seeds removed, chopped
  • 1 Tbsp. chopped parsley
  • 1 large garlic clove, chopped
  • pinch of dried tarragon and mint
  • salt and pepper to taste
  • 5 Tbsp. olive oil
  • 1/4 c. Parmesan cheese

Directions

    Place fish in buttered oven baking dish. Mix all other ingredients and spread over fish. Bake in 350° oven for 20 minutes or so until cheese is melted and tomatoes are soft.
