- 1 lb. fresh tomatoes, seeds removed, chopped
- 1 Tbsp. chopped parsley
- 1 large garlic clove, chopped
- pinch of dried tarragon and mint
- salt and pepper to taste
- 5 Tbsp. olive oil
- 1/4 c. Parmesan cheese
Directions

1Place fish in buttered oven baking dish. Mix all other ingredients and spread over fish. Bake in 350° oven for 20 minutes or so until cheese is melted and tomatoes are soft.
