- 11 Ry-Krisp crackers (any flavor), crushed to 3/4 c.
- 3 Tbsp. magarine, melted
- 1/4 c. zucchini, finely chopped
- 1/2 c. (2 oz.) Mozzarella cheese, shredded
- 3 eggs
- 1/4 c. plain yogurt
- 2 Tbsp. tomato, chopped
- 1/4 tsp. Italian seasoning
- 1/4 tsp. salt
Directions

1Preheat oven to 350°.

2Grease 8-inch pie plate.

3In small bowl, combine crackers, margarine and zucchini.

4Press into bottom and sides of pie plate.

5Sprinkle with cheese.

6In medium bowl, beat eggs.

7Stir in yogurt, tomato and seasonings.

8Pour over cheese.

9Bake for 30 minutes or until set.

10Let stand 5 minutes before cutting.
