Italian Rice Pudding

- 4 c. milk
- 3/4 c. sugar
- 1/2 c. long grain rice
- 1/2 c. water
- dash of salt
- 2 eggs, beaten
- 1 tsp. vanilla
- cinnamon
Directions

1Combine milk, sugar, rice, water and salt in heavy 4-quart saucepan.

2Bring to boil.

3Reduce heat and simmer, uncovered, 50 to 60 minutes, until rice is tender and desired consistency is reached.

4Stir frequently during cooking.

5Remove from heat.

6Stir in eggs and vanilla.

7Pour into 1 1/2-quart baking dish. Sprinkle with cinnamon.

8May be served warm or chilled with milk or whipped cream.
