Ingredients

  • 3 to 4 lb. chuck roast
  • 1 onion
  • 1 green pepper
  • 3/4 c. barbecue sauce
  • 1/2 tsp. Worcestershire
  • 1 1/4 c. water
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 tsp. garlic powder
  • 1 tsp. rosemary, crushed
  • 1/2 tsp. oregano
  • 1 tsp. parsley
  • 1/2 tsp. basil
  • 2 bay leaves

Directions

    Leave roast whole and place in pan.

    Chop onion and green pepper and place on top of roast.

    Mix remaining ingredients and pour around roast.

    Cover and bake at 300° for 5 hours.

    Remove, cool and shred meat, removing fat and bones.

    Put meat back into sauce and bake for 1/2 hour more.

    Great on hard rolls as sandwiches.
