Ingredients

  • 3 Tbsp. oil
  • 4 c. sliced zucchini
  • 4 c. sliced yellow squash
  • 2 c. diced celery
  • 1/2 c. sliced onion
  • 1 clove garlic, minced
  • 1 recipe Red Sauce Base
  • 2 Tbsp. salad oil
  • 1 medium onion, chopped
  • 6 oz. tomato paste
  • 6 oz. water
  • 1 Tbsp. sugar
  • 2 tsp. sugar
  • 1 1/2 tsp. dry leaf basil
  • 1 1/4 tsp. dry oregano
  • 1 1/4 tsp. salt

Directions

    In large skillet, heat oil.

    Add squash, celery, onion and garlic.

    Mix well.

    Cover and cook over low heat for 15 minutes. Stir occasionally.

    Add Red Sauce and rest of ingredients.

    Mix, cover and cook for 10 minutes.
