Ingredients

  • 3 small zucchini, cut into bite size pieces
  • 4 small scallop squash, cut into bite size pieces
  • 1 small onion, chopped
  • 1 fresh tomato, cut into small chunks
  • 1/2 stick margarine
  • 1 tsp. garlic salt or 1/2 tsp. garlic powder
  • 1/2 tsp. oregano
  • salt and pepper
  • 1 c. Longhorn cheese, shredded

Directions

    Place the ingredients in electric skillet on low until margarine is melted; add spices to taste, then saute until vegetables are cooked.

    Lastly add 1 cup shredded Longhorn cheese.

    Cover, let melt, blend and serve.
