- 3 small zucchini, cut into bite size pieces
- 4 small scallop squash, cut into bite size pieces
- 1 small onion, chopped
- 1 fresh tomato, cut into small chunks
- 1/2 stick margarine
- 1 tsp. garlic salt or 1/2 tsp. garlic powder
- 1/2 tsp. oregano
- salt and pepper
- 1 c. Longhorn cheese, shredded
Directions

1Place the ingredients in electric skillet on low until margarine is melted; add spices to taste, then saute until vegetables are cooked.

2Lastly add 1 cup shredded Longhorn cheese.

3Cover, let melt, blend and serve.
