- 2 c. sugar
- 4 c. boiling water
- 1 tsp. cream of tartar
- juice from 6 lemons (may add grated zest)
- 2 egg whites
Directions

1Dissolve sugar in water and let cool to room temperature.

2Add cream of tartar and lemon juice.

3Mix; pour into large bowl and place in freezer for 2 hours.

4Freeze until mushy, stirring 2 or 3 times.

5Beat egg whites until stiff and add to mixture.

6Continue freezing, stirring occasionally, until mixture has a snowy consistency.
