- 8 medium zucchini, sliced
- 14 oz. can tomatoes, drained
- 4 green onions, chopped
- 1/2 yellow onion, chopped
- 3 ribs celery, chopped
- 1/2 stick butter
- 3 oz. can mushrooms
- 1/4 tsp. sweet basil
- 1 c. Monterey Jack cheese, grated
Directions

1Cook the zucchini in boiling, salted water until tender. Drain.

2In saucepan, saute the onion and celery in butter until soft.

3Combine all the ingredients and mix well.

4Salt and pepper to taste.

5Transfer to a lightly buttered casserole and bake at 350° for 30 minutes.

6Serves 8.
