Jacked Up Potatoes

Ingredients

  • 3 lb Red skin potatoes, cut up (skin left on)
  • 4 tbsp Butter
  • 1/2 cup Milk, more or less to desired consistency
  • 1 tsp Garlic powder
  • 1/2 tsp Salt & pepper
  • 4 oz Can of diced green chilies
  • 6 oz Pepper jack cheese, grated
  • 1 each Smoked paprika, optional topping

Directions

    Boil the diced potatoes in salted water until they fall apart when pierced with a fork.

    30 minutes or so.

    Drain potatoes.

    Add milk, butter, and spices.
  5. 5
    Smash by hand or whip with a hand mixer.
  6. 6
    Fold in the green chilies & cheese.

    Top with a dusting I smoked paprika, if desired.

    I served this with my chipotle chicken recipe and spooned the sauce over the potatoes!
