Ingredients

  • 1 Tbsp. virgin olive oil
  • 1/2 Tbsp. unsalted butter
  • 1 leek (about 3 oz.), clean and cut 1/2-inch pieces
  • 1 medium onion, peeled and coarsely chopped
  • 2 carrots, peeled and cut into 1/2-inch pieces
  • 1 c. vermicelli pasta
  • 1 zucchini (4 oz.), trim and cut into 3/4-inch pieces
  • 4 mushrooms, coarsely chopped (1 c.)
  • 1 sweet yam (6 oz.), peel and cut into 1/2-inch pieces
  • 7 c. water
  • 1 tsp. salt
  • 1/4 tsp. ground black pepper

    Heat oil and butter in a saucepan.

    When hot, add the leek and onions and saute for 2 minutes.

    Then add the carrots, zucchini, mushrooms and yams.

    Mix well and add the water, salt and pepper.
