Jacques' Chicken Salad

  • 1 (10 oz.) pkg. frozen French-style green beans, cooked and drained
  • 1/4 c. Italian salad dressing
  • 1/2 c. mayonnaise
  • 3 large chicken breasts, cooked and chilled
  • 1/4 c. whipping cream, whipped
  • 1 c. diced celery
  • 3 lettuce cups
  • mayonnaise
  • 2 tsp. drained capers
  • 6 tomato slices
  • 6 ripe olives
  • 2 hard-cooked eggs, quartered

    Combine beans and Italian dressing.

    Chill several hours, stirring occasionally.

    Cut 3 thin slices from chicken breasts. Reserve.

    Cube the remaining chicken.

    Fold the 1/2 cup mayonnaise into whipped cream.

    Fold cubed chicken, celery, 1/2 teaspoon salt and dash of pepper into mayonnaise mixture.
