- 3 jalapeno peppers
- 3 eggs
- 2 1/8 c. milk
- 1 (12 oz.) pkg. Flako corn muffin mix
- 1 1/2 c. shredded Cheddar cheese
- 1 (8 oz.) can kernel corn, drained
- 1 large onion, grated
- 1/2 c. vegetable oil
- 1 tsp. sugar
- 1 tsp. baking powder
Directions

1Drain and rinse peppers; remove seeds and chop finely.

2Beat eggs in a large bowl.

3Blend in milk.

4Stir in corn bread mix, cheese, corn, oil, sugar and baking powder.

5Stir in peppers and pour into greased 13 x 9 x 2-inch pan.

6Bake at 400° for 40 minutes.
