Jalapeno Corn Bread

  • 3 jalapeno peppers
  • 3 eggs
  • 2 1/8 c. milk
  • 1 (12 oz.) pkg. Flako corn muffin mix
  • 1 1/2 c. shredded Cheddar cheese
  • 1 (8 oz.) can kernel corn, drained
  • 1 large onion, grated
  • 1/2 c. vegetable oil
  • 1 tsp. sugar
  • 1 tsp. baking powder

Directions

    Drain and rinse peppers; remove seeds and chop finely.

    Beat eggs in a large bowl.

    Blend in milk.

    Stir in corn bread mix, cheese, corn, oil, sugar and baking powder.

    Stir in peppers and pour into greased 13 x 9 x 2-inch pan.

    Bake at 400° for 40 minutes.
