  • 3 c. yellow corn meal
  • 3 Tbsp. sugar
  • 1 large onion, grated
  • 1 1/2 c. grated medium sharp cheese
  • 1/2 c. seeded jalapeno chilies
  • 1 can cream-style corn
  • 1/2 c. salad oil
  • 3 eggs, beaten
  • 1 1/2 c. milk

Directions

    Preheat oven to 400°.

    Add to corn bread mix the sugar, onion, cheese, chilies and creamed corn.

    Mix the salad oil, eggs and milk together; add to dry ingredients.

    Stir well and pour into greased skillet.

    Bake until lightly brown.

    Cool before cutting.
