- 1 teaspoon butter
- 1 teaspoon jalapeno, minced
- 1/2 cup fresh corn kernels
- 1/4 cup onion, finely chopped
- 1/2 cup grits, uncooked
- 1 1/2 cups water
- 1 teaspoon fresh thyme
- kosher salt
- fresh cracked black pepper
Directions

1Melt the butter in a medium saucepan.

2Add the jalapeno, corn and onion.

3Saute until the vegetables are tender.

4Stir in the grits.

5Add the water gradually, stirring constantly. Cook over medium heat until the grits have absorbed all the water, stirring constantly.

6Stir in the thyme and season with salt and pepper.
